Method

  1. Soak the soya chunks in hot water for ten minutes, then squeeze them dry and chop roughly.
  2. Rinse the rice and moong dal together until the water runs clear.
  3. Heat the oil, soften the onion, add the tomato and cook until it breaks down.
  4. Add the rice, dal, soya and peas with three cups of water and salt.
  5. Pressure cook for three whistles, or simmer covered for 20 minutes until soft.
  6. Rest for five minutes, stir, and finish with coriander.
